Superior Salsa

Updated: Feb 18, 2021

It’s taco Tuesday and this recipe is going to change your salsa game forever! Fire roasted Poblanos and Jalapeños give this salsa a wonderfully smoky heat and it’s made in the food processor so it’s minimal chopping.

What you will need:

4 Poblano Peppers

3 Jalapeño Peppers

3 large cans crushed tomatoes (make sure they don’t have basil added)

5 limes

1 purple onion

Handful fresh cilantro

4 cloves garlic

2 Tbs Ground Cumin

1 Tbs Salt

1 Tbs sugar (or honey)

1 tsp black pepper

1 tsp ground chipotle pepper

1 tsp garlic powder

The key to this recipe are those beautifully charred Poblano and Jalapeño peppers. To achieve this you will need a grill, gas stove top, or just your oven broiler. If you have a grill, fire it up and cook the peppers for about ten minutes. Turn them every few minutes until the outsides are blackened and blistering and the flesh feels tender. If you only have a gas stove that’s fine! The exact same thing can be achieved by putting your peppers directly on the fire of a gas stove top. And if you don’t have either of those options, just pop the peppers on a cookie sheet and place them as close to the broiler as possible. Make sure to turn them several times for even charring.

Now that your peppers are full of smoky delicious love, it’s time to move on to the other ingredients. Into the food processor add the roughly chopped purple onion, whole garlic cloves, and a BIG handful of fresh cilantro. After removing the stem, add the jalapeño peppers (I keep the seeds and membranes intact because I love the heat!) Then clean the poblanos of the stem, seeds, and membranes and add to the food processor as well. Pulse food until everything is finely chopped and evenly mixed.

At this point you could simply add some Tomatillos, seasonings, and lime juice and you would have a banging Salsa Verde—but that will be for another day!

In a large bowl, empty the cans of crushed tomatoes and incorporate all that beautiful green concoction from the food processor. Add your seasonings and fresh lime juice. Don’t be afraid to season liberally—the beauty of this salsa is its bold-jump-off-the-chip flavor so don’t be shy! And there you have it! Your salsa game will never be the same and you will be the hero to every Taco Tuesday. Enjoy!
